10 Recipes to Celebrate Cinco de Mayo 🇲🇽 - Keto style!

Mexican-style food has ALWAYS been one of my favorites! (Except when I was pregnant with Presley... then it was exclusively cereal and Olive Garden...) I'm psyched to celebrate Cinco de Mayo with fat-fueled recipes that got me all like, "Ole!"

Here are my top 10 favorite keto Cinco de Mayo recipes:

1. One of my favorite condiments to enjoy with Mexican food: sour cream!  Dairy, while delicious, makes me bloated AF.  I will still eat it from time to time (and I take a great digestive enzyme to help avoid the crazy bloat!), but it's easier than you may think to transform foods into dairy-free treasures.  Exhibit A: this coconut sour cream!  Dairy-free, keto AF, and the perfect topping for a ketogenic Mexican dish!

2. If you don't show up to my Cinco de Mayo party with a bowl full of guac, you may need to turn around and go home! (Just kidding... sort of.) Guacamole is so easy to make, and avocados are a staple in my ketogenic lifestyle! This Bacon and Roasted Garlic Guacamole is the stuff dreams are made of.

3. Take the coconut sour cream, the Bacon and Roasted Garlic Guacamole, and top off your Keto Pork Rind Nachos

4. Grain-free soft tortillas?! Like, whhhhhhat?! These are SO low carb and tasty, you will ditch the grain forever!

5. While I choose not to eat soy in any form, black soy beans are super low in carbs and might be just what your tastebuds are craving. Use them in this awesome Layered Taco Salad Dip recipe!

6. I love a good Tamale Pie! Swap out the lean ground beef for 80/20 (preferably grass-fed) ground beef to up your healthy fats!

7. Skip actually going to Chipotle and make your own Steak Bowl! Use the coconut sour cream, Bacon and Garlic Guac to add extra flavor and healthy fats!

8. If that Chipotle Steak Bowl is feeling a little empty, add some rice! Chorizo Cauliflower Rice is AMAZING as a side or a main dish!

9. Tequila dumped me HARD more than 15 years ago, and to this day, I still cannot smell Cuervo without wanting to gag. But hey, if you and tequila are still on good terms, consider this Spicy Keto Margarita to celebrate Cinco de Mayo. (Drink responsibly, and no more than one... Because "1 Tequila, 2 Tequila, 3 Tequila... FLOOR!)

10. Chocolate. Spice. Fat.  This is my flavor trifecta!  Hope you enjoy my Mexican Chocolate Fat Bombs!  If you make them, be sure to post pics and tag me!

 

Kate's Mexican Spice Fat Bombs

  • 1/4 cup coconut butter
  • 4 Tbsp Kerrygold butter
  • 3 Tbsp coconut oil, melted
  • 1 Tbsp Perfect Keto chocolate MCT oil powder
  • 2 Tbsp Lakanto drinking chocolate
  • 1/2 tsp cinnamon
  • 1/2 tsp chili powder (more or less, depending on how much spice you like)
  • Dash of ground black pepper

1. In a small saucepan over low heat, melt the coconut butter, Kerrygold, and coconut oil together. Whisk in the MCT oil powder, Lakanto drinking chocolate, cinnamon, chili powder, and black pepper. Whisk until well-combined

2. Pour the mixture evenly into the cavities of a silicone candy mold or ice cube tray. Place in the freezer for one hour to set.  

3. Remove from the freezer 15 minutes before serving. Keep these stored in the freezer so the fats to not melt.
